RECIPE: Cowboy Caviar
COWBOY CAVIAR
Summer is here! And there’s nothing quite like relaxing on the porch with a nice healthy dip on some crunchy chips on a hot summer day. Here’s one of our fave (and super easy!) recipes, for Cowboy Caviar.
Ingredients
1/4 cup Red Wine Vinegar
1/4 cup Olive Oil
2 cloves minced garlic
1 teaspoon salt
1-15 oz can black eyed peas (rinsed)
1-11 oz can white shoepeg corn (rinsed)
1 bunch cilantro (chopped)
1 bunch green onions (chopped)
1 1/2 cup diced tomatoes
2 avocados (cubed)
Directions
Mix the red wine vinegar and olive oil in bowl
Combine all remaining ingredients in another bowl and stir well
Pour red wine vinegar and olive oil mixture over top and mix
Serve with Multi Grain Chips (Food Should Taste Good) or Tortilla chips
